Fish Soup

Ingredients (Serves 6):

- 1 kg fresh fish (hake, ray, angler, small sea-scorpions, grouper or common star-gazer, any kind will do)
- one large red onion
- celery root
- 1/3 of a spray of parsley
- carrot
- 2 tomatoes
- potato
- 4 tablespoons of olive oil
- 4-5 grains of black pepper
- salt
- 2 slices of garlic
- a cup of rice
        
            
    RECIPE:

Put some olive oil and some vegetables into 2 l of cold water. Cook until the vegetables soften and the liquid becomes slightly sticky. Then add fish, black pepper, some salt and cook for another 20 minutes. Take the fish and vegetables out of the water. Clean the fish from bones and put them into soup again together with strained vegetables. Add some rice, chopped parsley and some white onion and cook for another 15 minutes. Put the remaining cooked fish on a platter and add some salt, pepper and olive oil if necessary.

Serve boiled potatoes, green salad or any other kind of vegetable salad on the side.

A piece of advice: always put fish into boiling water, because it crumbles in cold.
